Cheesy Broccoli and Bacon

The Recipe: Keto Made Easy, p. 196 (recipe is not online; cookbook is worth owning!)

This is another recipe from KetoConnect‘s new Keto Made Easy cookbook. Tonight was my first go at the cookbook and it did not disappoint (see Chicken Popper Casserole post).

The Bottom Line: This recipe was good, but I think it was cheesed out by its dinner companion, Chicken Popper Casserole. I may or may not make it again. It wasn’t bad, but wasn’t amazing.

The Nitty Gritty: We did up the ingredient amounts for the cheese sauce (because we had quite a bit of broccoli), and ended up baking the dish for about 15-20 minutes rather than the 10 recommended in the recipe in order to get the doneness we wanted. Because we cooked it a bit longer, the broccoli let off some liquid, but not too much. We baked it in a 9×13 pan rather than the 8-inch dish recommended in the recipe. I am unsure as to whether or not that affected the outcome.
