The recipe: Keto Raspberry Lemon Loaf

The Bottom Line: This was a very easy recipe.

The Nitty Gritty: Turns out I only had one lemon and the recipe called for two. Luckily I had limes on hand! My lemon was much larger than the lime, so I didn’t expect the lime flavor to overwhelm. The recipe called for the “juice and zest of 1 lemon” for the loaf and the same for the glaze. I expected actual volume amounts for the juice (baking IS all about chemistry after all). I ended up juicing both fruits into one vessel and using all but 1 Tbsp of juice in the cake. That ended up shorting me for the glaze, so I added a tiny bit of heavy cream and a tiny bit of water to get a glaze-like consistency.
