Chicken Popper Casserole

The Recipe: Keto Made Easy, p. 96 (recipe is not online; cookbook is worth buying!)

This is another recipe from KetoConnect‘s Megha Barot & Matt Gaedke. Tonight was the first night I’ve cooked from their new cookbook, Keto Made Easy. I can’t wait to try ALL of the recipes!

The Bottom Line: This recipe was fairly easy and darn tasty. We will definitely make it again. It was cheesy and bacony and wonderful.

The Nitty Gritty: I went off-book and added a bit more cheese than the recipe called for. The recipe called for 1.5 lbs of chicken and I had closer to two lbs so I scaled up the ingredients.

This is a brand new cookbook. I found a couple small inconsistencies between the ingredients and the directions, but it was nothing major at all.

We had Cheesy Broccoli and Bacon as a side dish. It was not a bad pairing, but there was enough cheese in the chicken dish to warrant a cheese-less side. Next time I’d probably just make roasted broccoli as an accompaniment.
