The Recipe: Blueberry Muffins

The Bottom Line: This one is a winner. I will definitely make again.

The Nitty Gritty: This came together very easily and I already had all of the ingredients except the blueberries. I used silicone baking cups and I made the larger version because I only had 10 of them. I’m glad I did because it made them look more like traditional muffins. I also chose to use butter instead of coconut oil as I was low on it. I’d be interested to try them with coconut oil to see if there is much difference.

I also did a little variation. Lemon + blueberry is one of my favorites, so I made half of them as directed and half of them I added lemon zest and some lemon oil. I thought about using the juice from the lemon I zested instead of the oil, but I was worried about messing with the dry to wet ratios. Now that I’ve made them once I might try that next time.
