The Recipe: 3 Ingredient Sugar-Free Peanut Butter Fudge

The Bottom Line: I was looking for something sweet to tide me over when cravings hit and this was a winner! Quick and easy to make. Will make again.

The Nitty Gritty: After reading this recipe, I had my doubts about how it would turn out so I decided to cut the recipe down and do a test batch. I made a 1/4 recipe (thankfully the amounts in the recipe made it very easy to scale down). For sweetener, I added 5 drops of Vanilla Creme stevia. The sweetness level was good – you could taste some sweetness, but it was not overwhelming at all.

I used salted peanut butter (and therefore did not add salt, following the recipe). Next time, I’d add a pinch of salt.

Another change I made: the recipe called for making this in a loaf pan then cutting in to pieces, but I felt that using a silicone ice cube tray made more sense. I will do this again next time – it was so easy to pour the mix into the tray and they’re super easy to pop out as needed.
