The Nitty Gritty: Item of note: weigh your Parmesan cheese. Method of grating can cause the volume to fluctuate wildly.
This dish comes together pretty easily. Saute the chicken, add everything but the Parm, and cook. Add Parm in to finish at the end. My sauce was a bit bland (due to measuring Parmesan by volume, not weight) so I added more Parm at the end. The additional cheese also helped tighten up the sauce, which was appreciated.
All in all, this was an easy and delicious meal that will be in regular rotation.
