The Nitty Gritty: This recipe comes from Carolyn Ketchum of All Day I Dream About Food, one of my favorite keto recipe sites.
This was relatively easy to make, but it’s not something you can crank out in 30 minutes. My final product was a bit looser than I expected upon serving (despite the fact that I followed the directions and cooked it until it was no longer jiggly in the middle).
I did not have cherry tomatoes, so I sliced up the grape tomatoes that I did have.
Next time I might add one additional egg in hopes of firming up the filling a bit.
Taste was fantastic. Served it with a side salad with a vinaigrette.
