Recipe: Keto Chicken Piccata
The Bottom Line: A keto spin on one of my Italian favorites. It was enjoyed by the whole crew! Will make again.
The Nitty Gritty: This recipe was from a site that was previously unfamiliar to me, but Google led me there in my search for a keto-friendly recipe and it did not disappoint. It was easy and delicious – easily a recipe that I could pull off on a weeknight.
My only change was that I used boneless skinless thighs rather than chicken breast (as I do not care for chicken breast).
We served this dish over zoodles (tossed with butter, lemon, and garlic).
