The Recipe: Cauliflower “Mac” and Cheese

I stole this one from Julie’s Plan To Eat library, it comes from FoodNetwork.com. She said it was good and she is not wrong.
The Bottom Line: Delicious. Like other “mac” and cheeses its not going to fool anyone into thinking its pasta, but it is creamy and cheesy and absolutely delicious. Lots of lefties when you’re only feeding two.
The Nitty Gritty: I did not boil the cauliflower, opting to steam it instead. Much easier to try to get it as dry as possible before putting it in the baking dish.
The biggest change I would make for next time is to mix the steamed cauliflower florets with the cheese sauce in a large bowl rather than trying to do it in the baking dish. That was awkward and a little messy. I would also leave a few minutes after taking it out of the oven for it to rest and set up a little more before serving.
I substituted a coconut oil spray for the vegetable oil.
Served with an amazing steak from the grill thanks to Dave and some asparagus.
