The Recipe: Low Carb Broccoli and Cheese Fritters

This recipes is from one of the first sites I found on keto and still use a great deal: ruled.me.

The Bottom Line:  If you’re missing fried dough based foods, this is fabulous savory option.  They don’t taste overwhelmingly broccoli, but you can tell its in there.  These might be a good option if you have some veg averse younglings.  The dill mayo is a must!

The Nitty Gritty:  A few recipe notes, I converted the flax seed into 1/4 cup which goes into the dough plus 3 Tablespoons which you use to coat the dough balls before frying.  I found this easier than 7 tablespoons, but its the same so it doesn’t really matter.

I also suggest making the mayo ahead of time so the flavors have time to get to know one another.

You don’t have to have a dedicated deep fryer for this.  We use a deep pot and a candy thermometer instead.  Just don’t crowd your pan!
