Julie sent me this recipe from Peace Love and Low Carb so hopefully I’m not stealing her thunder as this was a winner.

The Bottom Line: The recipe was straightforward and relatively simple and I followed it as written.  Is it going to fool someone into thinking its noodles?  No.  But it sure does scratch that mac and cheese itch with an added bonus of being fancified!  Will definitely make again.

The Nitty Gritty: I did have to steam the cauliflower for an extra few minutes to get fork tender and I definitely think the return to the pot after draining to get rid of excess moisture is key.  The cheese melted and thickened like a dream and it came together very quickly.  I can see where if you were distracted you could very quickly over cook the cheese.

I think my only complaint is that the amount of onion was not given as a weight or volume, but ‘one medium onion.’  Medium onions don’t really exist around here, they are all ginormous.  So I guessed and cut up 3/4ish of what passes for a regular onion and it worked out quite well.

  1. Holy cow, that looks amazing! What cheese did you use? I have a similar recipe I make where I steam the cauliflower in the instantpot- I wonder if it would be dry enough for this one?
