Can’t remember if I’ve made meatballs since starting keto over a year ago… but I decided to give it a whirl today. This recipe is solid, with all the usual suspects in an Italian meatball minus the breadcrumbs, of course.
I opted for the pan-frying method, which yielded a tasty yet odd-shaped “ball”. Apparently I was hungry because I gobbled my dinner down before snapping a photo of the finished product. I did get one of the meatballs in progress though.
Verdict: This recipe is a keeper and will be in regular rotation on our table.
