Recipe: Pesto Chicken Casserole with Feta Cheese and Olives

When I read the ingredients, I knew it would be a hit. Chicken, olives, pesto, garlic, feta, heavy cream…. This recipe has become a staple in our house.

The Bottom Line: SO delicious! We are a family that is a fan of leftovers, so I usually double this recipe so we have plenty to feed us for a second dinner (and maybe a few lunches too). Add a quick salad on the side and you’re set.

The Nitty Gritty: If for some reason you’re not a fan of olives, you could definitely leave them out and you’d still have a very tasty dish. I use Kirkland Basil Pesto from Costco. 1) It’s delicious and 2) it doesn’t have any crap ingredients.

I feel that this recipe is very forgiving and you can be a little lax on your measurements without doing damage to the end result. I usually add more garlic than the recipe calls for, because garlic. Feel free to experiment, try different pestos, etc.
