The Recipe: Shrimp and Cheesy Cauliflower Rice Stuffed Peppers

Someday I’ll make something from a source other than Craveable Keto.  Right now its definitely my go to when I want to try something new.

The Bottom Line:  I didn’t like this as a whole.  I loved the filling.  It was very risotto-ish, had tons of flavor, and a really great texture.  But the pepper flavor overwhelmed it almost entirely.  While I like peppers, it was too much even for me.

UPDATE!  Upon reheating the lefties I need to change my verdict.  Reheating cooked the peppers down even further and it completely changed the flavor profile of this dish.   The peppers were mild and slightly sweet and come together with the filling into what I’m sure was intended in the first place.  I’m considering making this again and baking the peppers for longer before adding the filling, or possibly switching to boiling them.

The Nitty Gritty:  I felt a little rushed making this recipe so doing the mise en place is key for me.  I also didn’t love how the shrimp cooked in the cauliflower mixture.  I think next time I would either sauté them separately and add in after, or get precooked shrimp and just use adding it in just to heat it through.   Other than that it all cooked up just as the recipes indicated.
